My Aunt who lives in Italy & Ethiopia came to visit us. When she heard about my interest in cooking, she immediately decided to teach us how to make Gnocchi. Gnocchi is small squarish dumplings made from potato, flour and egg topped with tomato sauce & parmesan cheese. The thing about gnocchi is that things have to be done quickly and carefully. The Gnocchi is mushy when served hot.
First you peel, slice, and boil potatoes and blend it in a food processor. Then you pour mashed potatoes onto a wooded surface make a dough by adding eggs and flour. Then you make thin strips a s thick as your dads thumb from the dough. You cut the strips into one-inch pieces and drop into boiling water. Strain the hot water and pour into a bowl that has tomato sauce that you have prepared and some shredded cheese. Pour more tomato sauce on top and sprinkle shredded cheese.
When we were doing the Gnocchi, my aunt saw our pumpkin patch that has plenty of flowers but only two pumpkins. My aunt said Let’s go ahead and make fried pumpkin.” The pumpkin flowers are better off picked in the morning. Making fried pumpkins is simple and easy. First you pick the pumpkin flowers (in the morning when they are opened up.) Then you take out the center part of the flower and then insert the pumpkin flower with thin slice of cheese and try to reclose the flower .Take some flour and mix in up with water till smoot and liquid .Dip the pumpkin flowers in the flour mixture and twist the of the pumpkin flower closed .Set a medium sized pan with some oil on medium heat ,and set the pumpkin flowers on the pan. Flip them over when they turn golden brown. Once the both sides are golden-brown take them off the pan and enjoy!
